About mead

Traditional mead – a mead made only from honey and water.

Varietal mead – a mead where the plants the bees drew their nectar from are known.
 

Dry mead

A mead with little residual sweetness.
 

Sweet mead and dessert mead

A mead with high residual sweetness.
Poland has its own grades of sweet mead:
Czwórniak (1/4 honey)
Trójniak (1/3 honey)
Dwójniak (1/2 honey)
Półtorak (2/3 honey).
 

Metheglin

Spiced mead, flavoured with spices or herbs — hops, vanilla or elderflower, for example.
 

Melomel

Fruit and berry mead, where 15–50 % fruit or berries are used alongside the honey. English has separate terms: melomel (any fruit or berry), cyser (apples), pyment (grapes), black mead (blackcurrants) and morat (mulberries).
 

Mölska

A mead where 15–80 % malt is used alongside the honey. Sometimes called beer mead. The drink is usually very close to a beer, and is known in English as braggot.
 

Bochet

Mead made from caramelised honey, which gives flavours of toffee and dark sugar. The oldest known complete recipe appears in Le Ménagier de Paris (1393) — the same book several of our dishes are built on.
